A crazy cocktail – The Nilsson Mojito
I love Mojitos but muddling the mint takes time and when you’re in a hurry or don’t have fresh mint around, whatcha gonna do? (Cue Bad Boys theme music.) So I got to thinking, what about using peppermint schnapps instead of mint? Got down the trusty bottle of high test schnapps and was about to squeeze up a mess of key limes when I remembered….there’s a bottle of Nellie & Joe’s Key Lime Juice in the fridge. Hey if you going to skip steps with the mint, might as well do it with the lime juice too. (If you haven’t tried Nellie & Joe’s, you should. It’s really good.)
So I started mixing up some spiced rum, lime juice and schnapps. First sip. Not bad but a little tart. OK methinks, but adding more schnapps will overdo the lime. Hmmmmmm. Then it hit me. Let’s toss in some Coco Real. YEAH BABY! So I put the lime in the coconut and drank ’em both up. (Thanks Harry Nilsson for inspiration and great tunes. You died too young.)
Anyway, here’s the final recipe. Adjust to your own tastes.
The Nilsson Mojito by Tom Geldner
- 2 oz spiced rum (Captain Morgan, Kraken, Sailor Jerry’s)
- 2 oz Nellie & Joe’s Key Lime Juice
- 1/2 oz 100 proof peppermint schnapps, green if you want color
- 1 tablespoon Coco Real
- Optional – splash of club soda
Nothing fancy, just mix the whole mess up and serve over ice.
