(Cue Bad Boys theme music.) So I got to thinking, what about using peppermint schnapps instead of mint? Got down the trusty bottle of high test schnapps and was about to squeeze up a mess of key limes when I remembered&#8230;.there&#8217;s a bottle of Nellie &amp; Joe&#8217;s Key Lime Juice in the fridge. Hey if you going to skip steps with the mint, might as well do it with the lime juice too. (If you haven&#8217;t tried Nellie &amp; Joe&#8217;s, you should. It&#8217;s really good.)<\/p>\n<p>So I started mixing up some spiced rum, lime juice and schnapps. First sip. Not bad but a little tart. OK methinks, but adding more schnapps will overdo the lime. Hmmmmmm. Then it hit me. Let&#8217;s toss in some Coco Real. YEAH BABY! So I put the lime in the coconut and drank &#8217;em both up. (Thanks Harry Nilsson for inspiration and great tunes. You died too young.)<\/p>\n<p>Anyway, here&#8217;s the final recipe. Adjust to your own tastes.<\/p>\n<h2>The Nilsson Mojito by Tom Geldner<\/h2>\n<blockquote>\n<ul>\n<li>2 oz spiced rum (Captain Morgan, Kraken, Sailor Jerry&#8217;s)<\/li>\n<li>2 oz Nellie &amp; Joe&#8217;s Key Lime Juice<\/li>\n<li>1\/2 oz 100 proof peppermint schnapps, green if you want color<\/li>\n<li>1 tablespoon Coco Real<\/li>\n<li>Optional &#8211; splash of club soda<\/li>\n<\/ul>\n<\/blockquote>\n<p>Nothing fancy, just mix the whole mess up and serve over ice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love Mojitos but muddling the mint takes time and when you&#8217;re in a hurry or don&#8217;t have fresh mint around, whatcha gonna do?
